We present highly stable liquid structures created by modifying liquid jet or droplet by nanosecond laser pulse on ns or μs time scales as an alternative to solid targets. In the case of liquid continuous jet modification on ns time scale the electron beam generation (divergence – 0.1rad, charge – 250pC with E>1 MeV, energies – up to 10MeV) was observed as result of interaction with relativistic femtosecond laser pulse (pulse duration – 50fs, intensity – 9*10^18 W/cm^2, wavelength – 805nm).
